Last night I made some chicken. I don’t know about you, but it helps me to cook ahead. I work nights so when I come in from work, I am hungry but tired. I often eat poor choices because of this. I also do this when I know I need to focus on writing. By taking this off my list of things to-do, I can’t use it as an excuse. 🙂
So I chose this for the Hermit since he is the card that reminds us sometimes the path is lonely. Sometimes we need to hole up so that we can focus on what must be done. We have to remove ourselves from the distractions of the world.
This Hermit is from Joanna Powell Colbert’s Gaian Tarot. She says, “The Hermit, the lunar male, retreats from the company of others to replenish his soul in solitude as he communes with the natural world.” If you study this card, you can see several different animals joining him. The Hermit’s Lemony-Garlicky-Snickety Chicky
- 4 frozen chicken breasts, boneless, skinless
- 1/2 C lemon juice + 1 TBS
- 4 tsp garlic (chopped in oil–the jar kind)
- 3 TBS garlic oil (made by adding 1 TBS garlic to 3 TBS olive oil if you don’t have any on hand)
- Tabasco
- 4 tsp Tony Cachere’s Cajun Seasoning
Preheat the oven to 350.
In a large glass pan, place the chicken breasts (do not thaw them out.) Pour the lemon juice over them reserving 1 TBS. Smear 1 tsp (or more if you like–I like more) of chopped garlic on each breast (the chicken breasts. Focus please.) Now pour the garlic oil over it (I like to add another TBS of lemon juice here.) Hit each breast with several shakes of Tabasco. This is to taste, but I love my spicy! Then sprinkle Tony’s over all of it.
Bake for 55 minutes.
This makes a great meal plus enough left overs so your Hermit self can focus on the work instead of wondering what’s for dinner.
